Magical, Color-Changing, Anti-Aging, Purple Cauliflower Soup
Growing up, my favorite color was purple.
But really, I loved everything on the pink-to-blue spectrum.
When we would color in school, I would always choose those colors. When I got dressed for school, I would save my favorite denim shorts with pink, purple, and blue butterflies on it for my favorite days. And when I entered my gel-pen era, those colors were always the ones to finish first.
I’m a far ways away from that little girl now—I dress in almost exclusively all white, I rarely use gel-pens, and I don’t do a lot of coloring.
But, I still love that little girl, so I made this very pink, purple, and blue recipe in ode to her.
Anti-Aging Soup?
It’s incredibly fitting that this recipe is in ode to that little girl because if I eat enough of it, my skin will look just like hers!
That’s because I designed this recipe to be for. your. skin. It’s filled with nutrients that support skin health, clear up your skin, make you radiate and glow, and reverse aging!
More on that later, for now: this high protein, high fiber, cauliflower soup is so creamy, so umami-rich, with a hint of tang. I topped mine with a homemade high protein curry dukkah, lots of fresh cilantro, black pepper, and a few pansy petals because we like to be cute!
And don’t worry—the recipe is soooo easy to make!
The Recipe
Ingredients:
1 head purple cauliflower
8 cloves garlic
1 red onion
3 cups water
8 tbsp white miso
1 cup soy milk
2 tbsp nutritional yeast
lemon for serving
Instructions:
peel & quarter your onion; and roughly chop the cauliflower
add garlic, onion, cauliflower & water to a big pot & bring heat to medium low; cover and let it cook
when it starts bubbling, put heat on low-low, and keep it on. it should simmer for roughly 40 minutes
transfer to blender and add in the other ingredients; blend till super smooth
to serve: add freshly cracked pepper & a little lemon juice and watch it turn pink!
