High Protein, Low Calorie, Vegan Mayo

Fun fact about me: I love mayo.

I used to be embarrassed to admit this because there was some kind of stigma around mayo. Like it didn’t feel cool to say I liked mayo. I feel like when I was younger, all the popular girls thought mayo was gross?

But, I wasn’t popular, and I fucking loved mayo.

What I don’t love: gaining weight.

And unfortunately, mayo is exceptionally calorie dense.

When I first went vegan in May 2017, I heard about people making mayo out of silken tofu.

I tried a few recipes. None tasted even remotely like mayo. And truthfully, most of them weren’t even good.

So I tried other vegan mayo bases: cashews, aquafaba, oil, coconut yogurt…you name it, I tried it. And nothing really worked.

Some of the cashew or oil-based ones tasted good—albeit not quite like mayo—but they were so rich it kinda defeated the purpose.

But finally, after nearly EIGHT YEARS of experimentation, I have developed a vegan mayo that is high in protein, low in calories, and LEGIT tastes like mayo. In fact, it tastes so much like mayo that my non-vegan boyfriend literally didn’t believe me that it was vegan (let alone healthy).

Blush Mayo vs. Real Mayo

I crunched some numbers, and this is pretty wild:

My mayo has one FIFTH of the calories, almost 1/6 of the fat, less than half of the carbs, and twice as much protein

The Recipe

Ingredients:

  • 1 box extra firm silken tofu (I use Mori-Nu brand)

  • 4 tbsp olive oil

  • 1 tbsp dijon mustard

  • 1 tbsp white miso

  • 1/2 tsp black salt

  • 2 tbsp ACV

Instructions:

  1. Just blend everything together!
